Well the fruits of early spring labor are beginning to yield beautiful and tasty produce just tempting the taste buds! Not exactly ripe yet, I check daily on the progress eagerly awaiting the day that I can begin picking! Of course, the resident chipmunks have already begun to help themselves but I am not overly concerned as I have plenty to share!

I am already beginning to formulate new recipes with the eggplants, cucumbers, peppers, and tomatoes in addition the basil and oregano in abundance. First on the list will be eggplant Parmesan, using the juicy roma tomatoes for a delicious fresh sauce. I can honestly say that nothing beats the taste of a fresh tomato!
