Layered Greek Dip*...Yummy!


Several months ago I tried out a new recipe found in Midwest Living Magazine. I thought it appropriate to make since my daughter, Carrie, was bringing over a friend of Greek descent. Needless to say it was a huge hit! The entire dish was consumed in a matter of an hour by two petite women! I am posting the recipe as it has now become a favorite of the family and so easy to make. As summer gardening begins to yield it's fresh produce it makes perfect sense to keep this recipe at the top of your "need to prepare" list. Enjoy!

· 1 8 oz. package cream cheese, softened
· 1 T. Italian seasoning and 1 T. lemon juice
· 3 cloves minced garlic
· 1 small container of classic hummus (or make your own)
· 1 container of crumbled feta cheese
· 1-2 Roma tomato(s), roughly chopped and seeds removed
· 1 cucumber, roughly chopped ( I use English cucumbers)
· a handful of pitted kalamata olives, sliced*
· 2 green onions, roughly chopped
Make the dip
Mix together the cream cheese, Italian seasonings and garlic. In a pie plate, using a rubber spatula, spread the cream cheese mixture in an even layer. Drop spoonfuls of hummus on top and then spread to make an even layer. Sprinkle half of the feta cheese crumbles, then half the cucumber, then half the tomato then repeat. Finish with sprinkles of sliced olives. Top with green onions. Top with green onions. Serve with pita or tortilla chips.

* You may want to double this recipe!
